What do Ukrainian cuisine, delectable soft serve, and tantalizing Thai fusion tacos have in common? They all originate from a unique Long Beach establishment known for crafting food trucks from the ground up, nestled alongside the Los Angeles River.

Martin Ramirez, the mastermind behind California Food Trucks, proudly claims, “This is where food trucks are born.” Over the past 15 years, he has played a pivotal role in shaping the success of numerous beloved local eateries and major corporations. His expertise spans custom builds for local favorites like SnoCorner to large-scale 30- and 40-foot catering trucks for high-profile names like Google and Monster Energy.

The Art of Food Truck Manufacturing

In his workshop, Ramirez, along with shop manager Cody Madole and a dedicated team of four employees, offers a comprehensive range of services for aspiring food truck owners. From plumbing and welding to electrical work, they transform ordinary vans and commercial vehicles into fully functional mobile kitchens. This niche manufacturing hub serves enterprising chefs and restaurateurs looking to test their culinary concepts at music festivals, farmers markets, or during lunch breaks at local offices.

The food truck industry has flourished as the financial barriers of opening traditional restaurant doors have risen. With notoriously slim profit margins, trucks present a safer investment—and they can be resold easily should circumstances change.

Ramirez discovered his passion for food truck manufacturing through an inspiring family story. Back in the late 2000s, his stepmother ventured into the business by purchasing a truck to sell tacos in Miami. Before her taco journey even began, she decided to list the truck on Craigslist, testing the waters of the resale market. Amazingly, she received offers that doubled her initial investment.

Armed with a unique blend of skills acquired from over a decade of home remodeling as a general contractor and experience in metal fabrication from building race cars, Ramirez identified his calling. Manufacturing food trucks combined both worlds seamlessly.

Building Connections and Expanding Horizons

Years into his food truck journey, Ramirez collaborated with his cousin to operate a taco truck named LA Tacos & Co. While he has since stepped back from that venture, he is now busy with a pizza truck in partnership with Louis Lombardi, the founder of Avalou’s Italian Pizza and a Long Beach resident. Their friendship blossomed through shared interests, and they are now gearing up to offer pizza delivery via UberEats from the truck stationed at Ramirez’s California Food Trucks.

Through his experiences, Ramirez has gained firsthand insight into the intricacies of designing efficient mobile kitchens, setting up new food vendors for success before they even pick up a knife. For instance, Ashley Monconduit, who runs SnoCorner near Long Beach Polytechnic High School, commissioned a custom food cart from Ramirez. While her brick-and-mortar shop focuses on New Orleans-style shaved ice known as Snoballs, she needed a cart for serving beignets and soft serve at various events.

Ramirez’s innovative design, which included a removable soft serve machine, has been particularly beneficial for catering events specializing solely in beignets.

Always looking to innovate, Ramirez is now steering clients toward solar-powered batteries instead of traditional generators. His reasoning is simple: a generator is likely to fail at the most inopportune moments. With the technology he installs, Ramirez can often troubleshoot from his desk, regardless of where a truck is located.

However, he remains committed to providing on-site repairs as well, fixing mishaps for drivers who may have accidentally damaged their vehicles while racing to events. Notably, some of his projects have taken him as far as Hawaii, where he enjoys visiting the trucks he’s built whenever possible.
